TMRW Meatball Pasta

What you need:

For the Meatballs:

  • 1 pack TMRW Ground
  • 2 tablespoons parsley, shaved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons shredded vegan mozzarella
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ¼ teaspoon chili flakes
  • 1 teaspoon paprika
  • 2 tablespoons panko breadcrumbs

Instructions:

  1. In a bowl, mix the meatball ingredients, and roll into 9 balls.
  2. Heat a nonstick pan over medium high heat and add 2 tbsp of neutral oil.
  3. Once the oil is hot, add the meatballs, and cook until browned all around, approximately 6-8 minutes.
  4. Remove from heat and set aside.

For the Marinara Sauce:

  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • ½ teaspoon chili flakes
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 teaspoons sugar
  • 1 x 28 oz can tomato sauce
  • 1 cup water

Instructions:

  1. In a medium sized sauce pot set to medium heat, add 2 tablespoons of neutral oil, and heat.
  2. Once hot, add the diced onions and soften, approximately 5-6 minutes.
  3. Add the minced garlic and saute for another 3 minutes.
  4. Add all the seasoning, and toast for 1-2 minutes.
  5. Bring the heat to high, and add the tomato sauce and water and bring to a boil.
  6. Once boiling, reduce to low, and simmer for 20-30 minutes.
  7. Adjust seasoning as desired.
  8. After the 30 minutes of simmering, carefully add the cooked meatballs, and using a spoon, coat them with sauce and allow to simmer for another 10 minutes.

For the Caramelized Onion Rice:

  • 1 red onion, sliced
  • 2 tablespoon olive oil
  • 2 tablespoons vegan butter
  • 1 cup long grain rice, rinsed
  • 2 cups water
  • ½ teaspoon salt

Instructions:

  1. In a saucepan set to medium heat, add the 2 tablespoons of butter and olive oil.
  2. Once melted, add the sliced onion, and salt.
  3. Cook for approximately 20 minutes, or until the onions are tender and sweet from the caramelization.
  4. Bring the heat to high and add the rinsed rice, 2 cups water, and bring to a boil.
  5. Stir thoroughly, reduce the heat to low, and simmer with a lid on for 15 minutes.
  6. Once the rice is cooked throughout, turn off the heat, fluff with a fork, and begin assembly.

To assemble:

  • Vegan parmesan
  • Fresh basil leaves

Instructions:

  1. Place a bed of caramelized onion rice on a plate or bowl, top with meatballs in sauce.
  2. Add parmesan and fresh basil leaves for garnish.
