Vegan Cowboy Beans

This delicious TMRW Sausage & bean dish is the perfect blend of smoky, sweet, tart and spice. A plant-based take on a classic cowboy meal!

 4 TMRW Hickory Maple Sausages
 1 white onion, diced
 2 tbsp vegan butter
 2 cans of pinto or navy beans
 3 tbsp brown sugar
 ¼ cup sugar free ketchup
 2 tbsp apple cider vinegar
 2 tsp sea salt
 2 tsp smoked paprika
 1 tsp ground cumin
 ¼ cup low-sodium vegetable stock
 2 tbsp freshly chopped parsley

Allow sausages to thaw in refrigerator overnight. Slice into coins.

Preheat oven to 300F.

Heat a large pot to medium, melt butter and add onion, season with salt and cook for 5 minutes.

Drain and rinse the beans, add to the pot. Add the brown sugar, ketchup, apple cider vinegar, salt, paprika, cumin and vegetable stock. Stir and bring to a boil, then reduce to a simmer. Cover with a lid and place in the oven for 30 minutes.

In a skillet, fry the sausage coins at medium heat in a little bit of oil for 6 minutes until golden brown.

After 30 minutes, remove the pot from the oven and make sure that the beans have reduced to a thick gravy-like texture. Return to the oven for an additional 10 minutes without a lid for thicker beans.

Add sausages to the beans, and stir in parsley. Adjust seasoning and serve with hot, crusty bread.
