HK-Style Breakfast Tomato ‘Beef’ Macaroni Soup

A take on the popular Hong Kong dish with a light but flavourful breakfast soup using TMRW Original Bratwurst Sausage, as made by Nancy Wu.

 2 TMRW Original Bratwurst Sausages
 200 g macaroni
 2 tomatoes, diced
 2 shallots, diced
 2 tbsp tomato paste
 2 tbsp sugar
 1 tsp vegetable bouillon
 salt & pepper
 1 l water
Sausage Marinade
 2 tsp soy sauce
 ½ tsp sugar
 1 tsp vegetable oil
 ½ tsp white pepper

Mix marinade ingredients and marinate the vegan plant-based sausages with the marinade mixture.

Add oil in a large sauce pan and heat it up over medium-high heat.

Add in shallots or onions, sweat it out for 5 minutes.

Add in tomato paste, sugar, black pepper, and a dash of salt. Mix well.

Add in fresh tomatoes, canned tomatoes, and water and bring to a boil.

Once it is boiling, cover the lid and reduce the heat to a low simmer and cook it for 10 to 15 minutes.

Add in TMRW plant-based sausages and cook thoroughly.

While the tomato soup base is cooking, cook macaroni in a separate pot according to package instructions.

Drain cooked macaroni well and add to tomato soup base. Mix well.

Divide into two bowls. Serve & enjoy!
